Jewish Adoption FAQs - a good place to start - a page at the JCCA website.
Ametz Adoption - a program of the JCCA in New York. Although they do not provide adoption placement, they do homestudies, post-adoption services and other support. They do seem to provide some type of referral service to adoption attorneys if you're interested in going that route.
Adoption and the Jewish Family - a list of brochures and guidebooks available through Ametz.
Stars of David - An information and support network. Find (or perhaps start) a chapter near you!
A.T.I.M.E - A Torah Infertility Medium of Exchange. This organization focuses mostly on infertility support, spiritual guidance and information through a Jewish lense, although lately has been adding more information on adoption.

Article from the Jewish News Weekly of Northern California - "Rabbi probes issues around non-Jewish adoption" by Karen Koenig. "As increasing numbers of American Jews adopt children of non-Jewish backgrounds and ethnicities, "our children are redefining who and what Jews are," according to Reform Rabbi Yoel Kahn."
